The annual Oklahoma Pecan Growers Association meeting includes a cooking show with pies, cakes, cookies, breads, cheese spreads and salsa. Although the pecan pies are the stars of the show. The Grand Champion of the 2008 show was Jackie Baker of Baker Pecans in Tishomingo, OK. She used small native pecans grown on their farm south of Tishomingo.

Grand Champion Pecan Pie (Aunt Elizabeth’s recipe)
Crust:
1 cup all-purpose flour
1/2 teaspoon salt
3/4 cup butter-flavored Crisco shortening
1 medium egg
1/8 cup cold water
3/4 teaspoon vinegar

Filling:
4 eggs beaten
1 cup sugar
1 cup white corn syrup
1/4 cup melted butter
1 1/2 cups pecans

1. Combine flour and salt with shortening with a pastry cutter or your fingertips until incorporated, but do not over mix. Add egg, cold water and vinegar. Mix ingredients with a fork just until combined. Pinch the dough to see if it comes together.

2. Roll dough to fit into a 9-inch pie pan. Crimp edges and let rest in the refrigerator while you make the filling.

3. Mix together eggs, sugar, corn syrup and butter until well combined. Stir in pecans.

4. Bake at 350 degrees for 45 minutes.

Butter Pecan Cake
1 Butter Pecan Cake Mix
1 Container coconut pecan frosting
3 eggs
1 cup water
1/3 cup oil
1/2 cup pecans

Mix ingredients

Add another 1/2 cup of chopped pecans in bottom of bundt pan and pour batter over pecans.

Pecan Honey Butter
1 1/2 cups butter (softened)
1/2 cup honey
1-teaspoon cinnamon
1 cup chopped pecans

Blend all ingredients and fold in pecans.

Refrigerate in airtight container
